Ingredients: 400 g (14 oz) shin or rump of beef cut into 2cm (1 in) cubes,
500 g (1 lb) potatoes, diced
1 whole carrot,
1 whole parsley root
2 sliced sweet peppers
1 skinned, chopped tomato
2 chopped onions
1 clove of garlic, crushed
1 tsp hot paprika
1 tbs lard
1/2 tsp ground caraway seeds
Csipetke: (pinched dough)
2 heaped tbsp flour
Preparation: Melt the lard in the pan and fry the onion gently until golden.
Sprinkle with the caraway.
Add the meat, carrot, peppers, tomato, parsley root, garlic and paprika,
cover with water. Bring to the boil, then add salt. Cover the pan, leave to
simmer. As the water evaporates, add more: about 2 litres, will be needed in
all to achieve the correct consistency-neither too thin nor too thick.
After about 2 hours, add the potatoes and bring to the boil.
Meanwhile, beat the egg and mix with the flour to make a stiff dough. Pinch
small pieces from the dough (about the size of a hazelnut) and 5 min before
serving drop them into the boiling soup. Serve the goulash when the meat and
potatoes are tender and the csipetke rise to the surface.
Preparation: 30 min, cooking time about 2 1/2 hours.

Don't get caught in the premium-rate mousetrap
Did you know that you could be charged u to Ł1.50 a minute to access
some web sites? The concern is that many people don't and that it's
easy to enter such sites without knowing charges and, as a result, run
up huge phone bills. So far, premium-rate web sites have been set up
which offer anything from weather reports to adult material.
Entering a premium-rate site causes your modem to redial, using
"dialler" software downloaded from the site, on a premium rate line,
missing out your Internet service provider. You pay up to Ł1.50 a
minute while you view. When you exit, the modem redials to your ISP.
The first of these sites appeared in 1998, and currently there are a
few dozen, but the idea is likely to catch on as site providers look
for alternatives to charging by credit card for access to their
services. While users would be clear they were paying for information
from such sites when they were asked for their card details, with this
system, the site owner collects its cash through your phone company on
Other concerns about these sites include children running up bills and
the security of your PC. Recently, one site was fined Ł2,000 by the
premium rate watchdog Ictis. Victims were stung for up to Ł400 after
the software they downloaded changed their PC's default settings to
automatically dial the premium-rate number.
To try to curb these problems, Ictis is this month due to publish
guidelines for premium-rate sites and services with a "visual
element" - including interactive TV such as Open, which runs a
premium-rate Trivial Pursuit game.
The new guidelines say, among other things, that you must be given
clear price information before you connect. Calls must also cost no
more than Ł20 in total. If the site shows adult material, the company
must take steps to ensure the viewer is over 18.
If a child runs up bills on an adult site, the service provider must
repay the call costs under Ictis' rules. Its hotline is 0800 500 212.
